Drain the cassava and transfer it to a large mixing bowl. Use a potato masher to mash the cassava until completely smooth.




Add the sardines, white cheese, egg yolks, baking powder, salt, black pepper, and chopped cilantro or parsley to the mashed cassava. Mix thoroughly until well combined.












Preheat the cooking oil in a frying pan over medium-high heat. With wet hands, shape the sardine mixture into small balls.


Dip each ball into the egg whites, then roll them in the bread crumbs until evenly coated.




Fry the croquettes in the hot oil until golden brown on all sides. Remove with a slotted spoon and drain on paper towels to remove excess oil. Serve warm with ketchup.
