Halve the plums and place them on the prepared baking sheet. Drizzle with olive oil, one tablespoon of maple syrup, and a dusting of cinnamon. Roast for 10 minutes until the fruit is soft and caramelized.






In a medium saucepan, combine the oats, water, half of the milk, vanilla, and a pinch of salt. Bring to a gentle boil over medium heat.






Reduce the heat to low and simmer for 5 minutes, stirring occasionally until the mixture has thickened. Remove from heat and stir in the remaining milk and the final tablespoon of maple syrup.




Divide the oatmeal into bowls and top each serving with the roasted plums.
