Heat 1 tablespoon of olive oil in a saute pan over medium heat. Add the minced garlic and cook for 1 minute until fragrant.



Add the sun-dried tomatoes, wilted spinach, salt, black pepper, and thyme to the pan. Cook for 2 minutes, then transfer the mixture to a bowl.







Stir the feta cheese and cream cheese into the spinach mixture until well combined.





Using a meat mallet, pound the pork chops to an even thickness. Cut a pocket into each chop, stuff with the cheese and spinach mixture, and secure the edges with toothpicks.







Season the exterior of the stuffed pork chops with additional black pepper.



In a small bowl, whisk together the chicken broth, lemon zest, lemon juice, and mustard.






Heat the remaining tablespoon of olive oil in a large heavy skillet over medium-high heat. Sear the pork chops for 5 minutes per side until golden and cooked through.




Remove the pork to a serving dish and tent with aluminum foil to keep warm.



Pour the broth mixture into the hot skillet, scraping up any browned bits from the bottom. Simmer for 8 minutes to reduce the sauce by half, then spoon over the pork before serving.
