Slice the onions and apples, then arrange them in the bottom of the prepared roasting pan. Sprinkle the sage and garlic over the fruit and vegetable layer.







Place the pork chops on top of the onion and apple bed. Drizzle the lemon juice, honey, and olive oil evenly over the meat.






Spread a teaspoon of mustard over each pork chop, then season generously with salt and black pepper.





Roast the chops in the oven for 10 to 15 minutes, or until the meat is golden brown and cooked through.
