While the pasta cooks, heat the olive oil in a non-stick skillet over medium heat. Add the onion, minced garlic, and fresh chilli, sautéing for 3-4 minutes until softened.






Stir in the tomato purée and cook for 1 minute, then incorporate the pilchards with their sauce. Use a wooden spoon to gently break the fish into smaller pieces.



Add the pitted black olives to the skillet and continue to cook for another 2 minutes to heat through.



Drain the pasta, reserving 2-3 tablespoons of the cooking water. Add the pasta and reserved water to the skillet, tossing everything together until well coated.



Divide the pasta among serving plates and garnish with a generous scattering of Parmesan cheese.
