Heat extra virgin olive oil in a large Dutch oven over medium heat. Add the diced onion and garlic, sautéing until softened and fragrant.





Stir in the tomato paste and cook for two minutes. Deglaze the pot with white wine, scraping up any browned bits from the bottom.




Add the seafood to the pot, starting with the firmest fish, and cover with water or fish stock. Season with salt and pepper, then simmer gently until all seafood is cooked through.




Toast slices of crusty bread and rub them with a raw garlic clove. Place the bread in bowls and ladle the hot stew over the top.
