Season the fillets generously with salt and black pepper.



Heat the olive oil in a large saute pan over medium heat. Working in batches, place the trout skin-side down and sear for 2 to 3 minutes until the skin is crispy.



Flip the fish carefully using a spatula and cook the flesh side for an additional 2 to 3 minutes until just opaque and cooked through.



Add the butter to the pan and allow it to melt and bubble. Toss in the tomatoes and cook for 2 minutes until slightly softened.



Stir in the fresh tarragon, remove from heat, and serve immediately.
