Turn the dough onto a floured surface and knead by hand for 10 minutes until smooth and elastic.


Place the dough in a lightly oiled bowl, cover with a kitchen towel, and let it rise in a warm spot for 90 minutes until doubled in size.



Shape the dough into a loaf, place it on a baking sheet, and let it proof for another 30 minutes.

Bake the bread in a preheated oven at 230°C for 25-30 minutes until golden brown and hollow-sounding when tapped.


While the bread cools, slice the cremini mushrooms and mince the garlic cloves. Sauté them in a frying pan with olive oil and a pinch of salt until tender.






Slice the cooled bread, toast the slices, and top generously with the garlic mushroom mixture.
