Blitz half of the chestnuts with water in a blender until creamy, then roughly chop the remaining chestnuts using a chefs knife.





Heat olive oil in a frying pan over the stove. Fry the shallots with a pinch of salt until softened, then add the garlic, chopped chestnuts, and fresh sprig rosemary, frying for 2 minutes.








Add the wild mushrooms and more olive oil to the frying pan. Cook for 3 minutes until softened. Drain the soaked dried mushrooms, chop them, and add to the pan along with the soy sauce, frying for 2 minutes more.







Whisk the cooking wine, reserved mushroom soaking liquid, and chestnut cream together in a bowl. Add half to the mushroom mixture in the frying pan and cook for 1 minute until glossy. Remove and discard the rosemary sprigs.







Bring a large pot of salted water to a boil. Drop the lasagne sheets into the water for 2 minutes until pliable, then plunge into a bowl of ice water. Transfer to kitchen towels.






Spread the mushroom sauce on the lasagne sheets, roll them up, and cut in half. Position the rolls cut-side up in a casserole dish. Pour the remaining sauce over the top and bake in the oven at 180°C for 10 minutes.





In a bowl, toss the breadcrumbs, olive oil, and dried sage leaves. Scatter over the pasta and bake for another 10 minutes until golden and crispy. Let cool for 10 minutes before serving with a drizzle of black truffle oil.
