In a mixing bowl, whisk the eggs and sugar together using a hand mixer until the mixture is thick and pale in colour.





Add the yogurt and citrus zest to the egg mixture, whisking until combined.




Gradually fold in the dry ingredients, then incorporate the olive oil until the batter is smooth.


Pour the batter into the prepared baking tin and bake for 35 minutes, or until a skewer inserted into the center comes out clean.

While the cake bakes, combine almonds, raisins, cranberries, honey, and orange juice in a saucepan. Bring to a boil and cook for 1-2 minutes to create the syrup.







Remove the cake from the oven, pierce the surface repeatedly with a skewer, and pour the warm syrup evenly over the top. Allow to cool slightly before serving.
