Dredge the dried whitebait in all-purpose flour, shaking off any excess to ensure a light, even coating.



Heat a generous amount of sunflower oil in a heavy-bottomed pot or deep-frying pot until it reaches approximately 175°C.


Carefully place the floured whitebait into the hot sunflower oil and fry for 2 to 3 minutes until they are golden brown and crispy.





Remove the fish using a slotted spoon and drain on paper towels, then immediately season with salt and pepper to taste.



Serve the fried whitebait immediately while hot, ideally with a side of lemon wedges.
