Rinse the acorn squash and yellow squash, then carefully halve, seed, and remove the stems. Slice the squash into uniform one-inch wedges.





In a large bowl, toss the squash wedges with olive oil, salt, and pepper until evenly coated.







Arrange the squash wedges in a single layer on the prepared baking sheet, cut side down, and roast for 15 minutes.



Flip the squash wedges and continue roasting for another 10 to 15 minutes until tender and golden brown.
