Shape the mixture into small round balls and deep-fry them in a heavy-bottomed pot with oil until golden brown. Remove with a slotted spoon and drain on paper towels.



In a separate pan, heat oil and sauté finely chopped onions, ginger, and garlic until translucent. Add tomato puree, turmeric, coriander powder, and garam masala, cooking until the oil separates.











Add water to the gravy to reach desired consistency, bring to a simmer, then gently drop the fried kofta balls into the sauce. Season with salt and pepper, and cook for a final few minutes before serving.
