Heat vegetable oil in a large saucepan over medium-high heat. Add the onion and floured lamb, browning them evenly.






Season the mixture with salt and pepper, then stir in the carrots and lamb stock. Bring to a boil, then cover and simmer for 60 minutes until the meat is tender.





Preheat your oven to 180°C. Stir the drained potato cubes into the lamb mixture.




Transfer the mixture into a pie dish and cover with the shortcrust pastry. Cut three small slits in the top to allow steam to escape.


Brush the pastry with beaten egg and bake for 40 minutes until golden brown.
