In a large mixing bowl, use an electric mixer to whip the eggs and granulated sugar until the mixture is thick, pale, and forms a ribbon trail when the beaters are lifted.




Gently fold in the sifted all-purpose flour and vanilla extract using a spatula until just combined, being careful not to deflate the egg foam.




Transfer the batter to a piping bag and pipe finger-sized strips onto the prepared baking sheet.


Bake in the oven until the ladyfingers are lightly golden and firm to the touch, then transfer them to a wire cooling rack.
