Heat one tablespoon of vegetable oil in a large frying pan or wok over high heat. Add the ground pork and cook, breaking it apart with a wooden spoon, until browned and slightly crispy. Remove the pork from the pan and set aside.




Add another tablespoon of vegetable oil to the same pan. Sauté the chopped celery and mixed vegetables for two minutes, then add the minced garlic and cook for an additional 30 seconds.






Pour the reserved pasta water into the pan, then stir in the oyster sauce and soy sauce. Use a wooden spoon to deglaze the pan by scraping up the browned bits from the bottom.






Return the cooked pork to the pan, add the rinsed noodles, and stir in your choice of hot sauce, chili paste, or sriracha to taste. Toss everything together until well combined and heated through.









Garnish the dish with fresh cilantro and serve with lime wedges on the side for squeezing over the noodles.
