Heat a grill pan over medium-high heat. Grill the eggplant slices for a few minutes per side until softened, then season lightly with salt and pepper.





In a small bowl, whisk together the ricotta cheese, egg, fresh parsley, and grated Romano cheese. Season the mixture with black pepper.









Spread a thin layer of marinara sauce into a casserole dish. Spoon the ricotta mixture onto each grilled eggplant slice, roll them up tightly, and arrange them in the prepared dish.
