Place the taro chunks into a large pot, cover with water, and bring to a boil. Reduce heat and simmer until the taro is fork-tender, approximately 45 minutes.


Drain the taro using a colander and return it to the pot. Mash the taro thoroughly using a potato masher until smooth.
