Peel the potatoes and slice them into thin, uniform rounds using a mandoline.



In a large bowl, whisk together the heavy cream, a pinch of nutmeg, salt, and black pepper.






Layer the potato slices in the prepared baking dish, pouring a small amount of the cream mixture over each layer.



Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and continue baking for another 31 minutes until the potatoes are tender and the top is golden brown.
