While the asparagus cooks, boil the eggs until hard-boiled, then peel them. Using a fork, mash the eggs in a bowl until they reach a fine, crumbly consistency.






Finely chop the fresh parsley and set it aside.



In a saucepan, melt the butter over medium heat. Whisk in the lemon juice and continue to heat gently for 2 minutes to create a light emulsion.




Stir the mashed eggs and chopped parsley into the butter-lemon mixture until well combined.






Arrange the cooked asparagus on a plate, spoon the egg and butter sauce over the stalk ends, and season with salt and pepper before serving warm.
