Toss the vegetables with olive oil, salt, and pepper on a baking sheet and roast in the oven until tender and caramelized.







While the vegetables roast, rinse the farro and place it in a pot with water or vegetable broth. Bring to a boil, then reduce heat and simmer until tender.





Drain any excess liquid from the farro and fluff with a fork. Divide the cooked farro into bowls and top with the roasted vegetables.






Drizzle with a little extra olive oil and season to taste before serving hot.
