In a saucepan, combine the pitted dates and water. Bring to a boil, then reduce heat to low and simmer, stirring occasionally, until the mixture thickens into a paste, about 6 to 8 minutes. Remove from heat, stir in vanilla extract, and set aside to cool.





In a food processor, pulse the rolled oats, all-purpose flour, brown sugar, baking soda, and salt until just combined. Add the butter and pulse until the mixture resembles coarse crumbs.







Transfer the oat mixture to a bowl and press half of it firmly into the bottom of the prepared baking pan to form an even base.



Spread the cooled date mixture evenly over the bottom crust, then top with the remaining oat mixture, pressing down gently to flatten the surface.


Bake in the center of the oven for 30 to 35 minutes, or until the top is golden brown. Allow to cool completely in the pan before cutting into squares.
