In a mortar, combine the minced herbs, bread crumbs, softened butter, and a splash of Pernod. Mash until a textured paste forms, then season with salt, black pepper, and a few dashes of Tabasco.









Spread a layer of rock salt about 1/4 inch thick into an oven-safe dish. Arrange the shucked oysters on top of the salt to keep them stable.





Spoon an equal portion of the herb butter paste onto each oyster.



Place the dish on the middle rack under the broiler and cook for approximately 5 minutes, or until the oyster edges curl and the topping is bubbling.
