Heat the vegetable oil in a saucepan over medium heat and sauté the onion and garlic until softened.





Stir in the curry powder and flour, cooking for 1 minute to toast the spices, then gradually whisk in the hot vegetable stock until smooth.






Simmer the sauce on low heat for 15 minutes, stirring occasionally, until thickened, then season with salt and pepper.



While the sauce simmers, prepare the chips by frying them in hot oil until golden brown and crispy, then drain on paper towels.
