Rinse the basmati rice thoroughly and soak in water for 20 to 30 minutes.



In a large pot, heat the ghee or oil. Sauté the chopped onion until golden brown, then add minced garlic and green chilies, frying for another 1 to 2 minutes.







Stir in the whole spices including cardamom, cloves, cinnamon, and bay leaves, followed by ground coriander and cumin, cooking until the mixture is highly fragrant.










Add the chicken pieces to the pot, browning them lightly before pouring in enough chicken stock to cover. Simmer until the chicken is nearly cooked through.



Remove the chicken from the pot. Measure the remaining liquid and add the soaked rice, bringing the mixture to a boil before reducing the heat to cook until the rice is almost tender.





Return the chicken to the pot, layering it over the rice. Cover tightly and steam on low heat for 10 to 15 minutes to allow the flavors to meld.




For an optional smoky aroma, heat a piece of charcoal until red hot, place it in a small foil cup in the center of the pot, add a teaspoon of butter on the coal, and cover immediately to trap the smoke for 5 to 10 minutes before removing the coal.




Garnish the dish with fried onions and fresh chopped coriander leaves before serving alongside chutney or raita.
