Roll the dough out thinly on a cutting board and use a round cookie cutter to cut into circles.



Wrap each dough circle around a cannoli tube, sealing the edges with a small amount of water.


Heat vegetable oil in a deep pot to 175°C. Fry the shells on the tubes until golden brown, then remove with a slotted spoon and drain on paper towels.



Whisk the ricotta cheese and powdered sugar together in a bowl until smooth to create the filling.





Once the shells have cooled completely, use a piping bag to fill the centers with the ricotta mixture.
