In a mixing bowl, whisk the egg yolks and sugar together until the mixture is pale and slightly thickened.




Slowly temper the egg yolk mixture by gradually whisking in the hot milk and cream, then return the mixture to the saucepan and cook until it coats the back of a spoon.







Chill the custard mixture in the refrigerator for at least 2 hours until completely cold.

Pour the chilled base into an ice cream machine and churn according to the manufacturer's instructions.



Transfer the churned ice cream to a container and freeze for 4 hours to firm up.




Prepare the waffle batter and cook in a preheated waffle iron until golden brown.
