Add the leeks, garlic, and celery to the pot and sauté, stirring frequently, for 3 to 4 minutes until the edges are golden.




Stir in the parsnips, potatoes, green cabbage, kale, mixed vegetables, vegetable stock, salt, and black pepper.









Reduce the heat to medium, cover the pot, and bring the mixture to a boil. Once boiling, reduce the heat to a low simmer and cook for 30 to 35 minutes until all vegetables are tender.


Remove from heat, stir in the lemon juice, and use an immersion blender to process the soup until completely smooth.
