Slice the vanilla bean lengthwise and scrape the seeds into a medium bowl. Discard the pod. Add the applesauce, agave nectar, and almond butter to the bowl, whisking until the mixture is smooth and well combined.










In a separate large bowl, combine the rolled oats, rice cereal, millet, almonds, flax seeds, sunflower seeds, dried cherries, chocolate chips, and salt. Pour the wet apple sauce mixture over the dry ingredients and stir thoroughly until everything is evenly coated.












Transfer the mixture into the prepared baking dish and press it down firmly with a spatula to create an even, flat layer. Bake for 20 to 25 minutes, or until the edges are lightly browned.




Remove from the oven and let the bars cool in the pan for 10 minutes. Use the parchment paper overhang to lift the bars out, then transfer them to a wire cooling rack for an additional 10 minutes before slicing into bars on a cutting board.
