Using a stand mixer, beat the cream cheese and sugar together until the mixture is smooth and creamy.



Add the eggs one at a time to the cream cheese mixture, followed by the ube extract, mixing on low speed until just combined.




Pour the cheesecake batter over the prepared crust in the springform pan and smooth the top with a spatula.



Bake in the preheated oven for 25 to 30 minutes, or until the edges are set but the center still has a slight jiggle.


Remove from the oven and allow the cheesecake to cool completely on a wire rack before refrigerating for at least 4 hours.
