Heat the coconut oil in a large Dutch oven over medium heat. Add the tempeh and sear until golden brown, then remove with a slotted spoon.





In the same Dutch oven, sauté the onion and garlic until softened. Stir in the Panang curry paste and cook until fragrant.





Pour in the coconut milk and bring to a gentle simmer. Return the seared tempeh to the pot and cook on low heat to allow the flavors to meld.




Season the curry with salt and pepper to taste, then serve immediately while hot.
