Remove the peppers from the oven, place them in a bowl, and cover with plastic wrap to steam for 10 minutes. Once cool enough to handle, peel off the charred skins, remove the seeds, and chop the peppers into small pieces.








In a large skillet, heat the extra virgin olive oil over medium heat. Add the chopped tomatoes and cook until they soften and release their juices.




Add the prepared roasted peppers to the skillet with the tomatoes. Season with salt, black pepper, and garlic if desired, then simmer until the mixture thickens into a spreadable consistency.
