Add the chopped onion to the pot and sauté until softened, about 3 minutes.


Stir in the cubed yellow squash, garlic, spice blend, bay leaf, and kosher salt, cooking for another 2 minutes to release the aromatics.







Pour in the stock, bring the mixture to a boil, then reduce the heat to low, cover partially, and simmer for 20 minutes until the squash is tender.



Remove the pot from the heat and discard the bay leaf. Stir in the sour cream or Greek yogurt.




Use an immersion blender to puree the soup until smooth, then taste and adjust seasoning with additional salt if needed.
