While the vegetables boil, defrost the shrimp in lukewarm water, pat them dry with paper towels, and add them to the bowl with the cooked vegetables. Slice the pre-cooked sausage into rounds, chop the cremini mushrooms, and add them to the bowl along with the chopped jalapeño.









In a separate small bowl, melt the unsalted butter and whisk in the Old Bay seasoning and minced garlic cloves to create the marinade. Pour this mixture over the shrimp and vegetable mixture, tossing well to ensure everything is evenly coated.








Preheat your oven to 200°C. Lightly oil a large baking sheet, spread the shrimp and vegetable mixture in a single layer, and top with lemon slices. Roast for 15 minutes or until the shrimp are pink and opaque.





Remove from the oven, garnish with fresh flat leaf parsley, and serve immediately alongside garlic bread and a glass of dry white wine.
