Heat a heavy-based frying pan over medium-high heat and add half of the sunflower oil. Once shimmering, place the sea bass fillets skin-side down and fry for 5 minutes until the skin is golden and crisp.




Flip the fillets and cook for an additional 1 minute until just opaque. Remove the fish from the pan, transfer to a serving plate, and keep warm. Repeat the process for the second batch of fish.




In the same pan, heat the remaining sunflower oil. Add the ginger matchsticks, sliced garlic cloves, and shredded red chillies, sautéing for 2 minutes until fragrant and golden.






Remove the pan from the heat and stir in the shredded spring onions. Drizzle the fish with soy sauce and spoon the hot aromatic oil mixture over the fillets before serving.
