Arrange the tomatoes on a baking sheet lined with parchment paper.



Season the tomatoes generously with salt, black pepper, and dried mixed herbs, then drizzle with extra virgin olive oil.





Roast in the oven for 4 to 6 hours, basting occasionally with the juices and oil that accumulate in the pan, until the tomatoes are shriveled but still hold their shape.



Remove from the oven and place one anchovy fillet on top of each roasted tomato, serving warm or at room temperature with a drizzle of the pan oil.
