In a small mixing bowl, combine the rosemary, garlic powder, salt, black pepper, and olive oil to create a rub.






Rub the seasoning mixture thoroughly over the pork, wrap in plastic wrap, and refrigerate overnight to allow flavors to penetrate.


Remove the pork from the refrigerator one hour before cooking to bring it to room temperature.

Preheat your oven to 190°C. Place the pork pieces on separate baking sheets.



Roast the pork for 45 to 55 minutes, switching the shelf positions halfway through to ensure even cooking.


After roasting, place the pork under the broiler for 5 minutes to achieve a browned, crisp exterior.


Remove the pork from the oven and allow it to rest for at least 10 minutes before slicing.


While the pork roasts, prepare the applesauce by heating butter, chopped apples, rosemary, sugar, cinnamon, and salt in a large saute pan over medium heat for 8 to 10 minutes.








Add water to the pan and simmer for 10 minutes, then use an immersion blender to process the mixture to your desired consistency.


Simmer the applesauce for an additional 5 minutes before serving warm over the sliced pork.
