Place the salmon fillets skin-side down on a baking sheet lined with parchment paper, then season the fish with sea salt and black pepper.




Scatter the prepared cherry mixture over and around the salmon fillets on the baking sheet.


Bake the salmon in the preheated oven for 12 to 15 minutes.


Switch the oven to broil and cook for an additional 3 minutes, or until the salmon reaches an internal temperature of 55°C as measured by a meat thermometer.



Remove the salmon from the oven and let it rest uncovered for 5 minutes before serving.
