Meanwhile, heat cooking oil in a sauté pan over medium heat. Add chopped mushroom stems, garlic, and onion. Sauté for 5-7 minutes until softened, seasoning with salt and black pepper.









Stir the diced tomato, bell pepper, and the sautéed onion mixture into the cooked quinoa. Season with additional salt, black pepper, and garlic salt, then cover and let sit for 2 minutes to meld flavors.









Prepare a baking sheet with parchment paper and lightly coat with non-stick cooking spray. Arrange the cleaned mushroom caps on the sheet, drizzle with olive oil, and season with salt and black pepper.








Stuff each mushroom cap generously with the quinoa mixture and bake for 20-25 minutes until the mushrooms are tender.
