Attach a candy thermometer to the side of the pot and continue to cook the mixture until it reaches the soft-ball stage (approximately 114°C).


Remove the pot from the heat and stir in the pecans and a pinch of salt until the mixture begins to thicken and lose its gloss.




Quickly drop spoonfuls of the praline mixture onto the prepared parchment paper and allow them to cool completely until set.
