Prepare the green sauce by combining the dipping sauce ingredients with a tablespoon of water in a blender. Process until the mixture is completely smooth.


Heat a frying pan or griddle over high heat. Remove the steaks from the marinade, brushing off excess garlic and parsley stalks, and season the meat well.




Sear the steaks for 2 minutes on each side. Remove from the pan and let them rest on a plate. Place the ciabatta halves toasted-side down on the same plate to absorb the resting juices.




Slice the rested steaks thinly and assemble the sandwiches by stuffing the meat into the ciabatta rolls along with the prepared green sauce and fresh rocket.
