Season the pork generously with salt and pepper, then brown the pieces in the Dutch oven in batches until golden on all sides.




Remove the pork from the pot, reduce the heat to medium, and add the sliced fennel bulb, onions, and green cabbage to the rendered fat.






Sauté the vegetables for 5 minutes, then pour in the wine to deglaze the pot, scraping the bottom to release the browned bits.



Return the pork to the pot and stir in the apple cider, chicken broth, apples, bay leaves, rosemary, and parsley.








Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 60 minutes, stirring occasionally.

Remove the rosemary, bay leaves, and parsley sprigs before serving.
