Heat 2 tablespoons of oil in a broad, shallow casserole dish. Sauté the garlic until pale gold, then add the blanched almonds and bread, frying until golden brown.





Transfer the fried mixture to a food processor. Add salt, pepper, and fresh parsley, then pulse until a coarse paste forms.




Heat 2 more tablespoons of oil in the same casserole dish. Brown the chicken pieces on all sides, seasoning as you go, then remove and set aside in a bowl.





Remove excess fat from the pan, leaving about 2 tablespoons. Sauté the onion, carrot, and celery until golden.




Deglaze the pan with the sherry, scraping up any browned bits. Add the chicken stock, the saffron infusion, bay leaves, and spices. Return the chicken to the pan, cover, and simmer for 40 minutes.







Remove the chicken to a bowl and cover with foil. Remove the bay leaves and cinnamon stick from the sauce.








Separate the yolks from the hard-boiled eggs. Mash the yolks in a small bowl with a few tablespoons of the sauce, then stir this mixture back into the main sauce in the pan. Cook for a few minutes until thickened.




Stir the almond paste into the sauce to thicken further. Return the chicken to the pan, coating it thoroughly with the sauce, and heat through for 3 minutes.




Garnish with extra parsley, almond pieces, and chopped egg whites before serving.
