In a large mixing bowl, combine the flour, wine, and the cooled infused oil to form a smooth dough. Knead well and let it rest for 30 minutes.



Roll out the dough thinly on a cutting board and cut into small squares. Fold the opposite corners of each square toward the center to create the characteristic pestiño shape.


Heat a deep-frying pot with vegetable oil to 175°C. Fry the pastries in batches until golden brown, then remove with a slotted spoon and drain on paper towels.



Warm the honey in a saucepan and dip the fried pastries into the honey to coat them thoroughly before serving.
