Crush the Oreo cookies and mix with melted butter, then press firmly into the bottom of the springform pan to form the crust.




In a large mixing bowl, beat the cream cheese and sugar together until smooth using an electric mixer.




Add the eggs one at a time, mixing on low speed until just combined, then stir in the vanilla extract.




Fold in additional crushed Oreo cookies into the batter and pour the mixture over the prepared crust.


Bake in the preheated oven for 30 minutes, or until the edges are set but the center still has a slight wobble.


Remove from the oven and allow to cool completely before refrigerating for at least 4 hours.
