In a large ovenproof frying pan, brown the minced beef over high heat until fully cooked.



Prick the aubergine with a fork and microwave on high until tender.



In a mixing bowl, whisk together the yogurt, egg, and parmesan cheese with a pinch of seasoning.






Stir the canned diced tomatoes and tomato purée into the beef, season to taste, and heat through.




Smooth the beef mixture surface, arrange the sliced aubergine on top, and pour the yogurt mixture over the vegetables.




Place the pan under the grill until the topping is set and golden brown.
