Cut the cauliflower into bite-sized florets using a chef's knife on a cutting board.



In a large mixing bowl, toss the cauliflower florets with olive oil, salt, black pepper, and the Ras el Hanout spice blend until evenly coated.






Spread the seasoned cauliflower in a single layer on the prepared baking sheet and roast in the oven for 40 to 45 minutes, tossing halfway through, until golden brown and tender.




Remove from the oven and serve hot, optionally garnished with fresh herbs.
