Heat the olive oil in a deep pan over medium heat. Using a chef's knife, make a small incision in the garlic cloves, leaving the skins on, and fry them for 5 minutes until fragrant. Remove the garlic from the pan and set aside.




Add the soaked bread to the same pan with the remaining oil. Simmer the bread over medium-low heat, stirring constantly with a wooden spoon for 15 minutes, and season with freshly ground black pepper.





Return the fried garlic to the pan and continue to cook, stirring frequently for another 20 minutes, until the bread is soft, golden, and well-toasted.
