In a mixing bowl, combine the ground beef with the spice blend, salt, and black pepper. Mix thoroughly and shape into even patties.





Heat the skillet with the reserved bacon fat over medium-high heat. Sear the beef patties for 90 seconds on each side.



Transfer the seared patties to an oven preheated to 213°C and bake for 3 to 4 minutes until the desired internal temperature is reached.


During the final minute of baking, place a slice of white cheese on each patty to melt.


While the burgers bake, heat a separate non-stick pan and cook the eggs over-easy. Once cooked, season each egg yolk with salt, black pepper, and a dash of Tabasco sauce.
