Finely dice the onion and mince the garlic using a chef's knife.




Heat olive oil in a large pot over medium heat. Add the onions and garlic, sautéing until softened and fragrant.





Add the rinsed red lentils and enough water to cover them by two inches. Bring to a boil, then reduce heat to low and simmer until the lentils are tender.


Stir in the coconut milk and season the dal with salt and black pepper to taste. Simmer for an additional few minutes to allow the flavors to meld.
